Keeping collector cars in climate controlled stora

Listening to the Barrett Jackson auction this month, many sellers stated that their collector car (many worth $100,000 to a million dollars) had been kept in a climate controlled facility (air condition in summer--heat in winter).
I bought an 2007 ZO6 and in the winter take it out of my garage, because I don't drive it in the winter, and rent storage space, but not heated? Over time, what might be the problems that would arise from being kept in a cold space? This is North Dakota I might add.
